Valentine’s Slow-Cooker Italian Chicken

  • 4 boneless, skinless chicken breasts (or thighs, if you prefer dark meat)
  • 1 can (14.5 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1 tbsp tomato paste (for added richness)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional, for a little heat)
  • Salt and pepper to taste
  • 1/2 cup mozzarella cheese (shredded)
  • 1/4 cup Parmesan cheese (grated)
  • Fresh basil or parsley for garnish (optional)
  • 1 tbsp olive oil (for searing the chicken)

Instructions

Step 1: Sear the Chicken (Optional, But Highly Recommended)

  • First, heat a large skillet over medium-high heat and add about 1 tbsp of olive oil.
  • Season your chicken breasts with salt and pepper on both sides.
  • Once the oil is hot, add the chicken to the skillet. Sear each side for about 2-3 minutes until golden brown. This step isn’t required, but it adds a beautiful depth of flavor to the chicken.

Step 2: Prep the Sauce

  • In a small bowl, combine your crushed tomatoes, chicken broth, tomato paste, garlic powder, onion powder, basil, oregano, and red pepper flakes (if using). Stir until well mixed.
  • Pour the sauce mixture into the bottom of the slow cooker.

Step 3: Add the Chicken to the Slow Cooker

  • Place the seared chicken breasts into the slow cooker, on top of the sauce. If you skipped the searing step, just place the raw chicken in with the sauce.

Step 4: Slow Cook

  • Cover the slow cooker and cook on low for 4-6 hours. The chicken will cook down to perfect tenderness, and the sauce will develop an amazing depth of flavor. Don’t worry if you have a busy day—set it and forget it!

Step 5: Finish with Cheese

  • About 10 minutes before serving, sprinkle the mozzarella and Parmesan cheese over the chicken. Cover and let it melt beautifully.

Step 6: Serve

  • Once the cheese has melted and the chicken is fork-tender, it’s time to serve. Garnish with fresh basil or parsley if desired. This step adds a fresh burst of color and flavor that’s perfect for Valentine’s Day.
