Ingredients
For the meatballs:
- 1 lb ground beef (you can use turkey or chicken if preferred)
- 1/2 cup breadcrumbs (preferably fresh or panko for a bit of texture)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 tbsp taco seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chili powder (adjust to taste)
- Salt and pepper, to taste
For the dough ring:
- 1 can (8 oz) crescent roll dough (make sure it’s the sheet variety, not the triangles)
For assembly:
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (for dipping)
- 1/2 cup salsa (for dipping)
- 1/2 cup guacamole (for dipping)
Optional toppings:
- Fresh cilantro, chopped
- Sliced jalapeños for a spicy kick
- Shredded lettuce, tomatoes, or avocado slices
Instructions
1. Preheat your oven
Start by preheating your oven to 375°F (190°C). While the oven is heating up, you can start working on the meatballs and assembling everything else.
2. Prepare the meatball mixture
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, taco seasoning, garlic powder, onion powder, chili powder, salt, and pepper. Mix everything together until well combined. You don’t want to overmix the meat (that can make them tough), so just stir it gently until it all comes together.
3. Form the meatballs
Using your hands, form the mixture into 12-15 meatballs, about the size of a golf ball. Make sure they’re all roughly the same size so they cook evenly. Place them on a baking sheet lined with parchment paper or lightly greased.
4. Bake the meatballs
Pop the meatballs in the oven and bake them for 12-15 minutes, or until they’re cooked through and browned on the outside. You’ll know they’re done when the internal temperature reaches 160°F (71°C). While the meatballs are baking, you can prep the dough ring.
5. Prepare the dough ring
Open the crescent roll dough and unroll it onto a baking sheet. Lay it out in a circular shape, creating a ring with a hole in the center. Make sure the dough overlaps slightly in the center, so it’ll stay in place when you assemble the meatballs. You can also press the seams together if they come apart while unrolling.
6. Add the meatballs
Once the meatballs are done, remove them from the oven. Arrange the meatballs in a circle on the dough ring. Place them so they’re close together but not touching. If you have any leftover dough, feel free to fold it over the top of the meatballs for a bit of extra golden crust.
7. Add the cheese
Sprinkle shredded cheddar cheese over the top of the meatballs. The cheese will melt beautifully as the dough bakes, creating that cheesy, gooey goodness we all love.
8. Fold the dough over
Carefully fold the edges of the dough ring over the meatballs. You don’t need to cover them completely—just fold it enough so the meatballs are tucked in and the dough forms a beautiful ring shape.
9. Bake the taco meatball ring
Place the entire dish in the oven and bake for 12-15 minutes, or until the crescent dough is golden brown and cooked through. The cheese will be melted, and the meatballs will be nestled in a cheesy, doughy heaven.
10. Let it cool and serve
Once the Taco Meatball Ring is out of the oven, let it rest for a few minutes to cool down before slicing. This also helps the cheese firm up a bit so it’s easier to cut and serve.
