When I first made these Strawberry Cinnamon Rolls for a weekend family brunch, they were an instant hit. Ingredients
For the dough:
- 3 1/2 cups all-purpose flour
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1/2 cup warm milk (about 110°F)
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/4 teaspoon salt
For the strawberry filling:
- 1 1/2 cups fresh strawberries, chopped
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 2 teaspoons ground cinnamon
- 1 tablespoon lemon juice
For the cream cheese glaze:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk (as needed for consistency)
Instructions
- Make the dough: In a small bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until it becomes foamy. In a large mixing bowl, combine the flour, sugar, salt, softened butter, egg, and yeast mixture. Stir until a dough forms. Knead the dough on a lightly floured surface for about 8-10 minutes until it’s smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.
- Prepare the strawberry filling: While the dough is rising, mix the chopped strawberries, sugar, cornstarch, cinnamon, and lemon juice in a medium bowl. Stir until the strawberries are well coated and set aside.
- Roll out the dough: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle, about 12×18 inches.
- Add the filling: Spread the strawberry filling evenly over the dough, leaving a small border around the edges. Starting from one of the longer sides, carefully roll the dough into a tight log.
- Cut the rolls: Using a sharp knife or dental floss (a handy trick!), cut the log into 12 equal slices. Place the rolls into a greased 9×13-inch baking dish, cover, and let them rise for another 30 minutes.
- Bake the rolls: Preheat your oven to 350°F. Bake the rolls for 25-30 minutes or until they are golden brown and the filling is bubbly.
- Make the glaze: While the rolls are baking, beat the softened cream cheese and butter in a bowl until smooth. Add the powdered sugar, vanilla, and milk, and mix until the glaze reaches your desired consistency.
- Glaze the rolls: Remove the rolls from the oven and let them cool slightly before drizzling the cream cheese glaze on top. Serve warm and enjoy!
