  • Author: Dianna

Ingredients

Scale

Here’s what you’ll need to make your delicious Roasted Jalapeño Popper Grilled Cheese:

  • 4 slices of bread (sourdough, whole grain, or your favorite type)
  • 1 cup of shredded cheese (cheddar, Monterey Jack, or pepper jack work great)
  • 23 roasted jalapeños (see instructions below on how to roast them)
  • 2 tablespoons cream cheese (softened)
  • 2 tablespoons butter (for grilling)
  • Optional: 2-3 slices of cooked bacon (for extra flavor)
  • Salt and pepper to taste

Instructions

Let’s get cooking! Follow these simple steps to create your Roasted Jalapeño Popper Grilled Cheese.

1. Roast the Jalapeños

  • Preheat your oven to 400°F (200°C).
  • Place the jalapeños on a baking sheet lined with parchment paper.
  • Roast in the oven for about 15-20 minutes, or until the skins are blistered and charred. Keep an eye on them—this adds so much flavor!
  • Once done, remove them from the oven and let them cool. After cooling, peel off the skins, remove the seeds (if you want it less spicy), and chop them finely.

2. Prepare the Cream Cheese Mixture

  • In a small bowl, mix the softened cream cheese with the chopped roasted jalapeños.
  • If you’re adding bacon, chop it into small pieces and stir it in.
  • Season the mixture with salt and pepper to taste. This creamy filling is what makes the sandwich so special!

3. Assemble the Sandwich

  • Take two slices of your chosen bread and spread the jalapeño cream cheese mixture generously on one side of each slice.
  • On one slice, add a layer of shredded cheese on top of the cream cheese. Use as much cheese as your heart desires!
  • If you’re using bacon, sprinkle some on top of the cheese before adding the second slice of bread on top, cream cheese side down.

4. Heat the Pan

  • In a large skillet or griddle, melt 1 tablespoon of butter over medium heat. You want it to coat the bottom of the pan for that golden crust.
  • Once the butter is melted and bubbling, carefully place the assembled sandwich in the skillet.

5. Grill to Perfection

  • Cook the sandwich for about 3-4 minutes on one side, until golden brown and crispy. Use a spatula to press down slightly, helping the cheese melt evenly.
  • Carefully flip the sandwich over, adding the remaining tablespoon of butter to the pan if needed.
  • Cook for another 3-4 minutes, or until the other side is golden brown and the cheese is fully melted.

6. Serve and Enjoy!

  • Once both sides are perfectly toasted, remove the sandwich from the pan and let it sit for a minute before slicing.
  • This resting time allows the cheese to set a bit, making it easier to cut.
  • Slice it in half and serve immediately, perhaps with a side of your favorite dipping sauce or a bowl of creamy tomato soup!
