Ingredients

Scale

Here’s what you’ll need to make One Pot Taco Pasta:

For the Pasta:

  • 12 oz (340g) pasta (such as penne, rotini, or shells): This will be the base of your dish, soaking up all those wonderful flavors.
  • 1 lb (450g) ground beef or turkey: A great source of protein that adds heartiness to the meal.
  • 1 medium onion, chopped: Adds sweetness and depth to the dish.
  • 2 cloves garlic, minced: For that aromatic kick!
  • 1 packet (1 oz or 28g) taco seasoning: This is where the flavor comes from! You can use store-bought or homemade.
  • 1 can (15 oz or 425g) diced tomatoes, with juices: Adds a juicy, tangy element.
  • 2 cups (480ml) chicken or vegetable broth: Helps cook the pasta and infuses it with flavor.
  • 1 cup (240ml) heavy cream: For creaminess that makes everything better.
  • 1 cup (4 oz or 115g) shredded cheese (like cheddar or Monterey Jack): A must-have for that gooey, cheesy goodness.
  • Salt and pepper to taste: Essential for seasoning.

For Toppings:

  • Sour cream: For a cool, creamy finish.
  • Chopped cilantro: Adds freshness.
  • Diced avocado: Creamy and delicious!
  • Sliced jalapeños: For those who like it spicy.
  • Lime wedges: A squeeze of lime brightens up the flavors.

Instructions

Step 1: Sauté the Aromatics

  1. In a large pot over medium heat, add a splash of olive oil and let it warm up.
  2. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. This is where your kitchen will start to smell amazing!
  3. Toss in the minced garlic and cook for an additional minute, stirring constantly to prevent burning.

Step 2: Brown the Meat

  1. Add the ground beef (or turkey) to the pot, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Don’t forget to season with a pinch of salt and pepper while it’s cooking!

Step 3: Add Flavorful Ingredients

  1. Sprinkle in the taco seasoning, stirring well to combine with the meat and onions. Let it cook for a minute to bloom the spices.
  2. Pour in the diced tomatoes (with juices) and broth, stirring everything together.

Step 4: Cook the Pasta

  1. Add the pasta to the pot, ensuring it’s submerged in the liquid. Bring the mixture to a gentle boil.
  2. Once boiling, reduce the heat to low, cover, and let it simmer for about 10-12 minutes or until the pasta is cooked al dente. Stir occasionally to prevent sticking, and if it looks too dry, add a splash of water or broth.

Step 5: Make It Creamy

  1. Once the pasta is cooked, reduce the heat to low and stir in the heavy cream. Let it simmer for another 2-3 minutes until everything is heated through and the sauce is creamy.

Step 6: Add the Cheese

  1. Remove the pot from the heat and stir in the shredded cheese until it melts and incorporates into the pasta. Taste and adjust seasoning if necessary.

Step 7: Serve It Up!

  1. Spoon the One Pot Taco Pasta into bowls and top with your choice of toppings—sour cream, chopped cilantro, diced avocado, jalapeños, and lime wedges.
