Ingredients
Scale
- 1 cup Velveeta cheese, cubed (you can use regular or reduced-fat)
- 1 cup sharp cheddar cheese, shredded (freshly shredded is best for a smooth melt)
- 1/2 cup milk (use whole milk for extra creaminess, or a lighter option if you prefer)
- 2 tablespoons butter
- 1/4 cup sour cream (this gives it a nice tang and adds to the creamy texture)
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon chili powder (for a bit of depth in flavor)
- 1/4 teaspoon smoked paprika (this adds a subtle smokiness, but you can skip this if you prefer a milder flavor)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper
- Optional: Fresh jalapeños, diced, for added heat (adjust to your spice preference)
Instructions
- Melt the Butter
In a medium saucepan, melt the butter over medium heat. Once it’s melted and starting to bubble, reduce the heat to low. This helps ensure the butter doesn’t burn while you’re adding the rest of your ingredients. - Add the Milk
Slowly pour in the milk, stirring as you go. Keep stirring until the milk and butter are fully combined, creating a nice base for your cheese. - Add the Cheeses
Add the cubed Velveeta cheese and shredded cheddar to the saucepan. Stir constantly to help the cheeses melt smoothly. You’ll notice the mixture start to thicken and become creamy. Keep the heat low to prevent the cheese from burning or seizing up. - Add the Seasonings
Stir in the garlic powder, onion powder, chili powder, smoked paprika, salt, and pepper. The spices really elevate the flavor of the dip, giving it that irresistible richness. Taste and adjust the seasoning to your liking. Want it a little spicier? Add more chili powder or a pinch of cayenne pepper! - Stir in the Sour Cream
Once the cheese is melted and the dip is creamy, stir in the sour cream. This gives the dip a nice tanginess and helps with the smooth, creamy texture. If the dip seems too thick at this point, you can add a little more milk to reach your desired consistency. - Optional: Add Jalapeños
If you’re a fan of heat, now’s the time to stir in the diced fresh jalapeños. This adds a pop of flavor and a spicy kick. You can skip this step or remove the seeds if you prefer a milder version. - Serve & Enjoy!
Once everything is fully combined and creamy, remove the dip from the heat. It’s time to serve! Pour it into a bowl and get ready to dive in with your favorite tortilla chips, nachos, or veggies.
