- 1 lb (450g) medium shrimp (peeled and deveined)
- 1 ripe avocado (diced)
- 1 cup tomato juice (fresh is ideal, but store-bought works just fine)
- 1/4 cup ketchup (for a little sweetness)
- 1 tablespoon hot sauce (adjust based on how spicy you want it—Mexican hot sauce like Valentina is perfect)
- 1 small cucumber (peeled and diced)
- 1/2 red onion (finely diced)
- 2 limes (juiced, plus wedges for garnish)
- 1/4 cup fresh cilantro (chopped)
- 1/4 teaspoon chili powder (for a mild kick)
- Salt and pepper to taste
- Tortilla chips (for serving)
Instructions
Step 1: Cook the Shrimp
- Start by boiling a pot of water. Add a pinch of salt, then drop in the shrimp.
- Cook the shrimp for about 2-3 minutes or until they’re pink and opaque. Be careful not to overcook them!
- Once done, immediately transfer the shrimp to a bowl of ice water to stop the cooking process. Let them chill for a few minutes before peeling and chopping them into bite-sized pieces.
Step 2: Prepare the Vegetables
- While the shrimp is cooling, chop the avocado into small cubes.
- Dice the cucumber and red onion as well. The cucumber will add a lovely crunch, while the red onion will give your cocktail a nice bite.
- For extra flavor, chop the fresh cilantro and set it aside.
Step 3: Make the Cocktail Sauce
- In a large mixing bowl, combine the tomato juice, ketchup, and hot sauce. Stir to mix well.
- Add the lime juice, chili powder, salt, and pepper. Taste and adjust the seasoning, adding more lime or hot sauce if needed.
Step 4: Combine Everything
- Now, add the chopped shrimp, avocado, cucumber, onion, and cilantro to the bowl with the cocktail sauce.
- Gently toss everything together, making sure all the shrimp and veggies are coated with the sauce.
Step 5: Serve and Garnish
- Spoon the shrimp cocktail into individual bowls or glasses.
- Garnish with extra lime wedges and a sprinkle of cilantro on top for a burst of color and freshness.
- Serve with a side of tortilla chips for dipping or enjoy it on its own as a light meal.
