  • 6 large eggs: Lightly scrambled for a fluffy, tender filling.
  • 6 slices of turkey bacon or beef bacon: Cooked and chopped for a savory bite.
  • 6 slices cheddar cheese: Melty, gooey cheddar adds richness and flavor.
  • ½ cup shredded mozzarella: For extra cheese pull and creaminess.
  • ¼ cup melted butter: Brushed over the rolls to make them extra soft and flavorful.
  • 1 tbsp honey mustard: Adds a hint of tangy sweetness to the butter glaze.
  • Salt and pepper: To taste, for seasoning the eggs.
  • 1 tbsp chives, finely chopped (optional): A fresh garnish that adds color and a mild onion flavor.

Instructions

  • Prepare the Rolls
    • Preheat the oven to 350°F (175°C).
    • Without separating the rolls, slice the entire pack of Hawaiian rolls in half horizontally. Place the bottom half in a baking dish.
  • Cook the Bacon
    • In a skillet over medium heat, cook the turkey or beef bacon until it’s crispy. Let it cool slightly, then chop into bite-sized pieces.
    • Tip: For extra flavor, you can also cook the bacon with a small dash of maple syrup, which caramelizes and adds a sweet, smoky finish.
  • Scramble the Eggs
    • In a medium bowl, whisk together the eggs, salt, and pepper until fully combined.
    • Heat a non-stick skillet over low to medium heat and pour in the egg mixture. Gently scramble until the eggs are soft but fully cooked. Remove from heat.
    • Pro Tip: For extra fluffy eggs, add a splash of milk or cream to the eggs before scrambling.
  • Assemble the Sliders
    • Layer the scrambled eggs evenly over the bottom half of the rolls.
    • Sprinkle the chopped bacon pieces over the eggs, distributing them evenly.
    • Place the cheddar cheese slices on top, followed by a sprinkle of shredded mozzarella for that extra cheesy pull.
  • Add the Top Layer of Rolls
    • Place the top half of the rolls over the layers of egg, bacon, and cheese. Gently press down to ensure everything is snug.
  • Make the Butter Glaze
    • In a small bowl, mix the melted butter with honey mustard.
    • Using a pastry brush, generously brush the butter mixture over the top of the rolls.
    • Optional: Sprinkle chopped chives on top for a pop of color and flavor.
  • Bake the Sliders
    • Cover the baking dish with foil and bake in the preheated oven for 10 minutes.
    • After 10 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly, and the tops of the rolls are golden brown.
