Instructions
Step 1: Preparing the Cod
The first step is prepping the cod fillets. Begin by patting them dry with paper towels. This is an important step because the less moisture on the surface, the better the sear will be. Once the fillets are dry, season both sides generously with salt and pepper. The seasoning is simple but effective, allowing the natural flavors of the cod to shine through.
Step 2: Searing the Cod
Next, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add 1 tablespoon of butter. The butter helps create a beautiful golden crust on the fish while adding a rich flavor to the dish.
Carefully place the seasoned cod fillets into the pan. It’s important not to overcrowd the skillet, so if you’re making more than 4 fillets, cook them in batches. Now, it’s time to make the herb butter sauce. Add the cubed butter to the skillet, stirring occasionally until it melts completely. Once the butter is melted, stir in the fresh herbs (parsley, thyme, and dill), lemon juice, and zest. If you like a hint of sweetness, drizzle in a teaspoon of honey. The honey balances the richness of the butter with a touch of sweetness, but it’s totally optional. Taste the sauce and season with salt and pepper as needed.
Step 4: Drizzling the Herb Butter Sauce
Once the herb butter sauce is ready, carefully pour it over the seared cod fillets. The sauce will immediately coat the fish, adding a beautiful shine and infusing it with that herby, garlicky goodness. You can spoon some of the sauce over the fish a few times to ensure it’s nicely coated.
