Instructions

1. Prepare the Gingerbread Crust:

  • Preheat your oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper for easy removal of the cheesecake later.
  • In a medium-sized bowl, mix together the graham cracker crumbs, ground ginger, cinnamon, cloves, nutmeg, and brown sugar. This will be the base of your crust and is what gives it that fantastic gingerbread flavor.
  • Pour in the melted butter and mix until the crumbs are evenly coated and the mixture sticks together.
  • Press the mixture into the bottom of the prepared pan, making sure it’s packed tightly and evenly. You can use the back of a spoon or your fingers to do this.
  • Bake the crust in the preheated oven for 8-10 minutes, or until it’s golden brown and fragrant. Remove from the oven and let it cool while you make the cheesecake filling.

2. Make the Cheesecake Filling:
