Here’s what you’ll need to make these Garlic Bread Meatball Bombs:
- 1 pound ground beef (or turkey)
- 1 cup ricotta cheese, drained
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 package refrigerated garlic bread (or make your own with dough)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Preparing the Meatballs
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This will help with cleanup later!
- In a large bowl, combine the ground beef, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, salt, and pepper. Use your hands to mix everything gently—don’t overwork the mixture, or your meatballs may turn out tough.
- Shape the mixture into meatballs about the size of a golf ball. You should end up with around 12 meatballs.
- Tip: If the mixture feels too sticky, wet your hands slightly to help shape the meatballs.
- Place the meatballs on the prepared baking sheet, leaving space between them for even cooking.
Making the Bombs
- Now, let’s prepare the garlic bread. If you’re using store-bought garlic bread, follow the package instructions for baking it just until golden brown (about 10 minutes) but slightly undercooked, as it will finish cooking when we add the meatballs.
- Once the garlic bread is ready, remove it from the oven and let it cool for a few minutes. Then, cut it into squares or circles, depending on your preference.
- Take a piece of garlic bread, and using your hands, flatten it out slightly. Place one meatball in the center, then top it with a spoonful of the remaining mozzarella cheese.
- Wrap the garlic bread around the meatball, pinching the edges to seal it closed. Repeat this for all the meatballs.
- Note: If you want to get creative, you can brush a little extra melted butter mixed with garlic on the outside for added flavor!
