- 4 medium potatoes (russet or Yukon Gold), peeled and diced into ½-inch cubes
- 1 large onion, sliced into thin wedges
- 14 ounces smoked Polish sausage, sliced into ¼-inch rounds
- 3 tablespoons vegetable oil or butter
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Optional: 1 bell pepper, diced (for added color and flavor)
- Optional garnish: Fresh parsley or chopped green onions

- Prepare the Ingredients
- Peel the potatoes and dice them into uniform cubes for even cooking. If you’re short on time, leaving the skin on works, too—just give them a good scrub.
- Slice the onion into thin wedges for maximum caramelization.
- Cut the smoked Polish sausage into ¼-inch rounds.
- Parboil the Potatoes (Optional but recommended for crispy potatoes)
- Bring a pot of salted water to a boil and add the diced potatoes.
- Cook for 5-7 minutes until just fork-tender, then drain and let them cool. This step ensures the potatoes cook evenly and crisp up beautifully in the skillet.
- Heat the Skillet
- In a large cast-iron or nonstick skillet, heat 2 tablespoons of oil over medium heat.
- Add the sliced sausage and cook for 4-5 minutes, flipping occasionally, until golden and slightly crispy. Remove from the skillet and set aside.
- Cook the Potatoes
- Add the remaining tablespoon of oil to the skillet. Once hot, add the parboiled potatoes in a single layer.
- Sprinkle with garlic powder, smoked paprika, salt, and pepper.
- Let them cook undisturbed for 4-5 minutes to develop a crispy, golden crust. Then, flip and repeat until all sides are evenly browned.
- Add the Onions (and Bell Pepper, if using)
- Push the potatoes to one side of the skillet and add the onions (and bell peppers if using) to the empty space.
- Sauté for 3-4 minutes until the onions soften and start to caramelize.
- Combine Everything
- Return the cooked sausage to the skillet, mixing it with the potatoes and onions.
- Cook for an additional 5 minutes, stirring occasionally, to allow the flavors to meld together.
- Taste and Adjust
- Taste the dish and adjust the seasonings as needed. You can add more salt, pepper, or even a pinch of cayenne for some heat.
- Garnish and Serve
- Sprinkle with chopped parsley or green onions for a fresh finish. Serve hot, straight from the skillet.
