Fried Potatoes, Onions and Smoked Polish Sausage

  • Author: Dianna
  • Total Time: 45 minutes

Ingredients

Scale

Here’s what you’ll need for this simple and delicious meal:

  • 4 medium potatoes (russet or Yukon Gold), peeled and diced into ½-inch cubes
  • 1 large onion, sliced into thin wedges
  • 14 ounces smoked Polish sausage, sliced into ¼-inch rounds
  • 3 tablespoons vegetable oil or butter
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: 1 bell pepper, diced (for added color and flavor)
  • Optional garnish: Fresh parsley or chopped green onions

Instructions

  • Prepare the Ingredients
    • Peel the potatoes and dice them into uniform cubes for even cooking. If you’re short on time, leaving the skin on works, too—just give them a good scrub.
    • Slice the onion into thin wedges for maximum caramelization.
    • Cut the smoked Polish sausage into ¼-inch rounds.
  • Parboil the Potatoes (Optional but recommended for crispy potatoes)
    • Bring a pot of salted water to a boil and add the diced potatoes.
    • Cook for 5-7 minutes until just fork-tender, then drain and let them cool. This step ensures the potatoes cook evenly and crisp up beautifully in the skillet.
  • Heat the Skillet
    • In a large cast-iron or nonstick skillet, heat 2 tablespoons of oil over medium heat.
    • Add the sliced sausage and cook for 4-5 minutes, flipping occasionally, until golden and slightly crispy. Remove from the skillet and set aside.
  • Cook the Potatoes
    • Add the remaining tablespoon of oil to the skillet. Once hot, add the parboiled potatoes in a single layer.
    • Sprinkle with garlic powder, smoked paprika, salt, and pepper.
    • Let them cook undisturbed for 4-5 minutes to develop a crispy, golden crust. Then, flip and repeat until all sides are evenly browned.
  • Add the Onions (and Bell Pepper, if using)
    • Push the potatoes to one side of the skillet and add the onions (and bell peppers if using) to the empty space.
    • Sauté for 3-4 minutes until the onions soften and start to caramelize.
  • Combine Everything
    • Return the cooked sausage to the skillet, mixing it with the potatoes and onions.
    • Cook for an additional 5 minutes, stirring occasionally, to allow the flavors to meld together.
  • Taste and Adjust
    • Taste the dish and adjust the seasonings as needed. You can add more salt, pepper, or even a pinch of cayenne for some heat.
  • Garnish and Serve
    • Sprinkle with chopped parsley or green onions for a fresh finish. Serve hot, straight from the skillet.
