It’s the perfect blend of sweet and spooky, and trust me, it has become a Halloween tradition in our household. Just picture this: fluffy green toast topped with gooey, melted cheese and fresh veggies, all adorned with fun monster faces. The kids go wild for it, and honestly, so do the adults! It’s a dish that not only fills our bellies but also sparks laughter and creativity around the dinner table. I can’t wait to share this delightful recipe with you!

  • 4 slices of thick bread (your choice: sourdough, whole grain, or even gluten-free)
  • 2 tablespoons of olive oil
  • 1 ripe avocado (for that green, monster-like base)
  • ½ cup of shredded mozzarella cheese
  • ½ cup of grated cheddar cheese
  • 1 small tomato (sliced for eyes)
  • Olives or capers (for eyes and mouths)
  • Fresh herbs (like basil or parsley, for garnish)
  • Salt and pepper (to taste)
  • Optional: Hot sauce or chili flakes (for an extra kick)

Instructions

  • Prep Your Bread: Start by preheating your oven to 400°F (200°C). Brush each slice of bread lightly with olive oil on both sides and place them on a baking sheet.
  • Toast the Bread: Pop the baking sheet in the oven and toast the bread for about 5-7 minutes or until golden brown and crispy. Keep an eye on it to prevent burning!
  • Mash the Avocado: While the bread is toasting, scoop out the ripe avocado into a bowl. Mash it up with a fork, adding a pinch of salt and pepper to taste. You can leave it chunky or make it smooth, depending on your preference.
  • Assemble the Toast: Once the bread is nicely toasted, take it out of the oven and spread a generous layer of the mashed avocado on each slice.
  • Add the Cheese: Sprinkle the shredded mozzarella and cheddar cheese on top of the avocado layer. Be generous—this is what makes it ooey-gooey delicious!
  • Create the Faces: Here’s where the fun begins! Use the sliced tomatoes, olives, and capers to create silly monster faces on each toast. Let your creativity run wild—there’s no wrong way to do it!
  • Melt the Cheese: Return the baking sheet to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
  • Garnish and Serve: Once done, take the toasts out of the oven, sprinkle with fresh herbs, and maybe a dash of hot sauce if you’re feeling adventurous. Slice them up and serve warm!
