Step 2: Toast the Bread

  2. For a skillet, heat a little butter or olive oil over medium heat. Place the bread slices in the skillet and cook for 2-3 minutes on each side until lightly browned.

Step 3: Sauté the Spinach

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds, just until fragrant. Be careful not to burn it.

  1. Place the toasted bread on two plates.
  2. Divide the sautéed spinach evenly between the slices, spreading it out to cover the surface.
  3. Gently place an egg on top of each slice.
