A plain rotisserie chicken works best as it allows the taco seasoning to shine, but a herb-roasted chicken can also add a subtle layer of flavor. Aim for around 3 pounds, which should yield approximately 1 ½ cups of shredded chicken needed for this recipe, with plenty leftover for other meals throughout the week (bonus!). If you are feeling ambitious, you could roast your own chicken, but for weeknight ease, store-bought rotisserie is the way to go.
  • 1 Cup Water: Water is essential for creating a slightly saucier and more flavorful chicken mixture. It helps to loosen the shredded chicken and allows the spices and salsa to meld together beautifully. It also prevents the chicken from drying out during the heating process, ensuring tender and juicy taco filling.

A chunkier salsa will add texture, while a smoother salsa will create a more uniform sauce.

Warming the taco shells according to package directions is essential for achieving that perfect crispy texture.
  • 8 oz. Monterey Jack Cheese: Monterey Jack cheese is a mild and creamy cheese that melts beautifully, making it an excellent choice for tacos. Its subtle flavor complements the taco seasoning without overpowering it. You can buy pre-shredded Monterey Jack cheese for convenience, or shred it yourself from a block for potentially fresher flavor. Using two forks, or your hands (once the chicken is cool enough to handle), shred the chicken meat into bite-sized pieces. You should aim for approximately 1 ½ cups of shredded chicken for this recipe. Don’t worry if you have a little more or less; the recipe is quite forgiving. Shredding the chicken ensures it will heat up quickly and evenly in the skillet and be easy to eat in the tacos. Set the shredded chicken aside.
  2. Combine Chicken and Flavorings in Skillet: In a large skillet, preferably non-stick, combine the shredded rotisserie chicken, water, salsa, chili powder, cumin, paprika, salt, and black pepper. Using a large skillet provides ample space for the chicken to heat evenly and for the flavors to meld together. Warming the taco shells is crucial for preventing them from being brittle and breaking when you fill them. Warm taco shells also have a much more appealing taste and texture than cold ones. If you prefer, you can also warm taco shells in a skillet or even in the microwave (though oven-warming generally yields the best texture).
  5. Assemble and Serve: Once the chicken mixture is heated through and the taco shells are warmed, it’s time to assemble your tacos! Set out the warmed taco shells, the flavorful rotisserie chicken mixture, shredded Monterey Jack cheese, shredded lettuce, and diced tomatoes.
