Easy Homemade Sloppy Joes Recipe

Ingredients

  • Ground Beef: 1.5 lbs lean ground beef (85/15 or 90/10 recommended to minimize excess grease)
  • Onion: 1 medium yellow onion, finely chopped (about 1 cup)
  • Green Bell Pepper: 1 medium green bell pepper, finely chopped (about 1 cup) – Optional, but adds classic flavor and texture
  • Garlic: 2-3 cloves garlic, minced (about 1 tablespoon)
  • Ketchup: 1 cup quality ketchup (this forms the base of the sauce)
  • Water: 1/4 cup water (or low-sodium beef broth for extra flavor)
  • Brown Sugar: 2 tablespoons packed light brown sugar (adjust to taste for sweetness)
  • Worcestershire Sauce: 1 tablespoon Worcestershire sauce (adds depth and umami)
  • Yellow Mustard: 1 tablespoon prepared yellow mustard (provides tang)
  • Apple Cider Vinegar: 1 teaspoon apple cider vinegar (brightens the flavors) – Optional, for extra tang
  • Chili Powder: 1/2 teaspoon chili powder (adds warmth, not significant heat) – Optional
  • Salt: 1/2 teaspoon kosher salt, or to taste
  • Black Pepper: 1/4 teaspoon freshly ground black pepper, or to taste
  • Olive Oil or Vegetable Oil: 1 tablespoon (for sautéing, if needed)
  • Hamburger Buns: 6-8 sturdy hamburger buns (potato rolls, brioche, or classic sesame seed buns work well), for serving

Instructions

  1. Brown the Beef: Place the ground beef in a large skillet or Dutch oven over medium-high heat. Break it apart with a spoon and cook until thoroughly browned, about 7-10 minutes. Stir occasionally to ensure even cooking.
  2. Drain the Grease: Once the beef is browned, carefully tilt the skillet and spoon out any excess grease. Alternatively, you can transfer the beef to a colander placed over a bowl to drain, then return the beef to the skillet. This step is crucial for preventing a greasy final product, especially if using beef with higher fat content.
  3. Sauté the Aromatics: Push the browned beef to one side of the skillet. If the pan seems dry, add the tablespoon of olive oil to the empty side. Add the finely chopped yellow onion and green bell pepper (if using) to the skillet. Sauté over medium heat until the vegetables soften and the onion becomes translucent, about 5-7 minutes, stirring frequently.
  4. Add the Garlic: Add the minced garlic to the vegetables and cook for another minute until fragrant. Be careful not to burn the garlic.
  5. Combine Ingredients: Stir the cooked vegetables and garlic into the browned ground beef, combining everything well.
  6. Build the Sauce: Pour the ketchup, water (or beef broth), brown sugar, Worcestershire sauce, yellow mustard, apple cider vinegar (if using), and chili powder (if using) directly into the skillet with the beef mixture.
  7. Season: Sprinkle in the salt and freshly ground black pepper. Remember you can always add more salt later, so start conservatively.
  8. Simmer: Stir everything together until the sauce ingredients are fully incorporated with the meat and vegetables. Bring the mixture to a gentle simmer over medium heat.
  9. Thicken and Meld Flavors: Once simmering, reduce the heat to low, cover the skillet loosely (allowing some steam to escape), and let it cook for at least 15-20 minutes. Stir occasionally. This simmering time allows the flavors to meld beautifully and the sauce to thicken to that perfect “sloppy” consistency. If the sauce seems too thin, you can let it simmer uncovered for the last 5-10 minutes, stirring more frequently to prevent sticking. If it gets too thick, stir in a tablespoon or two of water or beef broth.
  10. Taste and Adjust: After simmering, taste the Sloppy Joe mixture. Adjust seasonings if necessary – add more brown sugar for sweetness, a splash more vinegar or mustard for tang, or a pinch more salt or pepper to your preference.
  11. Serve: Once the sauce has reached your desired consistency and the flavor is perfect, remove the skillet from the heat. Spoon the hot Sloppy Joe mixture generously onto hamburger buns (toasted buns add great texture!). Serve immediately.
