- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1/2 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder

- 1 egg, beaten
- 1 cup all-purpose flour
- 1 1/2 cups marinara sauce (store-bought or homemade)
- 2 cups shredded mozzarella cheese
- 1/4 cup fresh basil, chopped (optional)
- 2 tablespoons olive oil for frying
- Fresh parsley for garnish
Instructions
- Prep your chicken: Start by flattening the chicken breasts to an even thickness. This ensures they cook evenly. Place the chicken breasts between two sheets of plastic wrap and gently pound them to about 1/2-inch thickness using a meat mallet. This step is key to getting that tender, juicy chicken.
- Coat the chicken: Set up your breading station. In one bowl, mix the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. In another bowl, whisk the egg until it’s beaten well. In a third bowl, place the flour.
- Bread the chicken: Dredge each piece of chicken in the flour, then dip it into the egg, and finally coat it in the breadcrumb mixture. Press gently to make sure the breadcrumbs stick well. Set the breaded chicken aside on a plate.
- Fry the chicken: Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for 4-5 minutes on each side, or until they’re golden brown and crispy. You may need to cook the chicken in batches, depending on the size of your skillet. Don’t overcrowd the pan!
- Assemble the dish: Preheat your oven to 375°F (190°C). After frying the chicken, place each piece in a baking dish. Spoon marinara sauce generously over each chicken breast, then sprinkle with mozzarella cheese.
- Bake: Pop the dish in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly, and the chicken is fully cooked through (an internal temperature of 165°F or 75°C).
- Serve: Once the Chicken Parm is out of the oven, let it rest for a few minutes. Sprinkle with fresh basil and parsley for a burst of color and flavor. Serve hot, and enjoy!
