- Prep your ingredients:
Start by cutting your steak into bite-sized pieces. If you’re using stew meat, it should already be pre-cut for you, but if you’re using sirloin, just make sure to slice it into roughly 1-2 inch chunks. Don’t worry about being perfect here – the Crockpot will do the work, and you’ll end up with delicious, tender bites no matter what. Chop the onion and mince the garlic, setting them aside. - Layer the ingredients in the Crockpot:
Add the steak (or stew meat) to the bottom of your Crockpot. Then sprinkle the chopped onions and minced garlic over the top. This is when things start smelling amazing! Next, pour in the beef broth and Worcestershire sauce. Add the dried thyme, paprika, salt, and pepper, then give everything a little stir to combine. - Let the Crockpot work its magic:
Put the lid on your Crockpot, set it to low, and let it cook for 4-6 hours. If you’re in a rush, you can set it to high and let it cook for 2-3 hours instead. About 15-20 minutes before serving, if you want a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of water to make a slurry. Stir this into the Crockpot and let it cook for the last few minutes. This will give the sauce a silky texture that coats the steak perfectly. - Serve and enjoy:
