  • 1 cup long-grain white rice – The perfect canvas to soak up the creamy coconut milk and aromatic flavors. Basmati or Jasmine rice also work wonderfully for their fragrance.
  • 1 ½ cups coconut milk (canned, full-fat for richness) – The heart of the dish! Full-fat coconut milk is crucial for that signature creamy texture and intense coconut flavor.
  • 1 ½ cups water or chicken broth (for added flavor) – Using chicken broth instead of water elevates the rice with an extra layer of savory depth.
  • 1 tablespoon coconut oil (or olive oil) – Coconut oil enhances the coconut flavor of the rice and adds a subtle tropical aroma. Olive oil is a good substitute if you don’t have coconut oil on hand.
  • 1 small onion, diced – The aromatic base for the rice, adding sweetness and depth.
  • 2 cloves garlic, minced – Infusing the rice with pungent, savory garlic flavor.

Instructions

Prepare the Chicken:

  1. Season the Chicken: In a small bowl, whisk together the ground cumin, ground coriander, garlic powder, onion powder, paprika, salt, and pepper. This aromatic spice blend is the key to flavorful chicken. Ensure all spices are well combined for even seasoning.
  2. Spice Rub Application: Generously rub the spice mixture evenly onto both sides of each chicken breast. Make sure every part of the chicken is coated for maximum flavor infusion. Don’t be afraid to really massage the spices into the chicken.
  3. Lime Juice Marinade: Drizzle the fresh lime juice over the seasoned chicken. The lime juice not only adds brightness but also helps to tenderize the chicken slightly. Let the chicken sit for at least 10 minutes, or even up to 30 minutes, to allow the flavors to meld and penetrate. This short marination step enhances the overall taste.

Prepare the Coconut Rice:

  1. Sauté the Aromatics: In the same skillet you used for the chicken (no need to wash it, as the chicken fond adds flavor!), add the coconut oil over medium heat. Let the coconut oil melt and heat up.
  2. Sauté Onions: Add the diced onion to the skillet and cook, stirring occasionally, until softened and translucent, about 3 minutes. Sautéing the onions first releases their sweetness and aroma, building a flavorful base for the rice. Avoid browning the onions excessively; you want them softened, not caramelized.
  3. Add Garlic and Ginger (Optional): Add the minced garlic and grated fresh ginger (if using) to the skillet with the softened onions. Sauté for an additional 1 minute, until fragrant. Be careful not to burn the garlic, as it can become bitter. Sautéing until fragrant maximizes the flavor of the garlic and ginger.
  4. Toast the Rice: Add the long-grain white rice to the skillet. Stir constantly to coat the rice grains evenly with the oil and aromatics. Toast the rice for about 1-2 minutes, stirring continuously. Toasting the rice enhances its nutty flavor and helps prevent it from becoming mushy during cooking.
  5. Add Liquids: Pour in the coconut milk and water (or chicken broth) into the skillet with the rice mixture. Stir well to combine all ingredients.
  6. Bring to a Simmer: Increase the heat to medium-high and bring the mixture to a simmer. Once it starts simmering (small bubbles gently breaking the surface), immediately reduce the heat to low.
  7. Simmer and Steam: Cover the skillet tightly with a lid. Reduce the heat to the lowest setting possible and let the rice cook undisturbed for about 15-18 minutes. It’s crucial to keep the lid on tightly to trap the steam and cook the rice properly. Avoid lifting the lid during cooking, as this releases steam and can affect the cooking time and texture of the rice.
  8. Check for Absorption: After 15-18 minutes, check if the liquid is absorbed and the rice is tender. Gently lift the lid and check if most of the liquid has been absorbed. The rice should be fluffy and tender. If there’s still liquid remaining, cook for a few more minutes, checking periodically.
  9. Rest and Fluff: Once the liquid is absorbed and the rice is tender, remove the skillet from the heat. Keep the lid on and let the rice sit, covered, for 5 minutes. This resting period allows the steam to redistribute evenly, resulting in perfectly fluffy rice. After resting, fluff the rice gently with a fork to separate the grains and release any remaining steam.
