Cocoa Spiced Salmon

  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp cocoa powder (unsweetened)
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp ground cinnamon
  • 1 tsp chili powder
  • 1 tsp ground black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 tbsp honey
  • Juice of 1 lime
  • Fresh cilantro (for garnish)

Instructions

. Prepare the spice rub

In a small bowl, combine the cocoa powder, cumin, paprika, cinnamon, chili powder, black pepper, and salt. Mix everything together until it’s well blended. This is where the magic happens! The cocoa powder will add a rich, deep flavor, while the cumin and cinnamon provide warmth. The chili powder will give it a little heat to balance everything out.

2. Prepare the salmon

Place the salmon fillets on a clean plate or cutting board. Pat them dry with a paper towel. Drying the salmon ensures that the spice rub sticks better and that the fillets sear nicely in the pan.

3. Rub the spice mix onto the salmon

Drizzle olive oil over each salmon fillet, and then generously coat the fillets with the spice rub. You want to make sure every inch of the fish is covered with the delicious cocoa-spice mixture. Gently press the spices into the salmon so they adhere well.

4. Cook the salmon

Heat a non-stick skillet or cast-iron pan over medium-high heat. Once hot, place the salmon fillets in the pan, skin-side down (if your fillets have skin). Cook for 4-5 minutes, undisturbed, until the edges of the salmon start to crisp up and the color begins to turn golden brown.

5. Flip and finish cooking

Carefully flip the fillets over and reduce the heat to medium. Continue to cook for another 3-4 minutes, or until the salmon reaches your desired level of doneness. I like to keep it a little on the rare side, where it’s still moist and tender on the inside.

6. Glaze with honey and lime

Just before serving, drizzle a little honey over the salmon fillets, then squeeze the juice of a lime on top. The sweetness from the honey and the acidity from the lime help to bring everything together.

7. Garnish and serve

Sprinkle some fresh cilantro over the top for a pop of color and freshness. Now, your Cocoa Spiced Salmon is ready to be enjoyed!
