Chicken Alfredo Gnocchi Bake

  • 1 lb (500g) potato gnocchi
  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works perfectly)
  • 1 jar (15 oz) Alfredo sauce (store-bought or homemade)
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/2 tsp Italian seasoning
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • Optional: 1 cup fresh spinach or steamed broccoli for added veggies
  • Fresh parsley for garnish

Instructions

1. Preheat the Oven

  • Set your oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish with butter or non-stick spray and set aside.

2. Prepare the Alfredo Sauce

  • In a medium saucepan, melt 2 tbsp of butter over medium heat.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Stir in the Alfredo sauce and heavy cream.
  • Sprinkle in the Italian seasoning, salt, and pepper. Mix well and simmer on low heat for 5 minutes.

3. Cook the Gnocchi

  • Bring a large pot of salted water to a boil.
  • Add the gnocchi and cook for 2-3 minutes, or until they float to the top.
  • Drain and transfer the gnocchi to the prepared baking dish.

4. Assemble the Bake

  • Add the shredded chicken to the gnocchi in the baking dish.
  • Pour the warm Alfredo sauce over the gnocchi and chicken, ensuring everything is evenly coated.
  • If using veggies like spinach or broccoli, stir them in at this stage.

5. Top with Cheese

  • Sprinkle the shredded mozzarella and grated Parmesan evenly over the top.
  • For extra indulgence, add a few small dollops of butter on top for a golden, bubbly finish.

6. Bake

  • Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and golden.
  • For an extra crispy topping, broil the dish for 2 minutes at the end.

7. Garnish and Serve

  • Remove the bake from the oven and let it rest for 5 minutes.
  • Sprinkle with fresh parsley for a pop of color and freshness.
  • Serve hot and enjoy the creamy, cheesy perfection!
