Here’s what you’ll need to make your Buffalo Chicken Grilled Cheese Sandwich:

  • 1 cup cooked chicken, shredded
    Use rotisserie chicken for convenience; it adds great flavor!
  • 1/4 cup buffalo sauce
    Choose your favorite brand or homemade for an extra kick.
  • 4 slices of bread (your choice)
    Sourdough or whole grain work wonderfully!
  • 1 cup shredded cheese
    Sharp cheddar or pepper jack adds a nice zing.
  • 2 tablespoons butter
    For spreading on the bread to achieve that perfect golden crust.

Instructions

Step 1: Prepare the Buffalo Chicken Mixture

  • In a medium bowl, combine the shredded chicken and buffalo sauce. Mix until the chicken is fully coated. If you like it spicier, feel free to add more buffalo sauce!

Step 2: Assemble Your Sandwich

  • Lay out two slices of bread on a clean surface. On each slice, sprinkle a generous amount of shredded cheese. This helps the buffalo chicken stick and adds a gooey texture.
  • Divide the buffalo chicken mixture evenly between the two slices. Top with more shredded cheese (because you can never have too much cheese!). Finally, place the other two slices of bread on top to create a sandwich.

Step 3: Butter the Bread

  • Spread a thin layer of butter on the outside of each slice of bread. This will help achieve that perfectly golden, crispy crust when you grill the sandwiches.

Step 4: Grill the Sandwiches

  • Heat a non-stick skillet over medium heat. Once hot, carefully place one sandwich in the skillet. Cook for about 4-5 minutes or until the bread is golden brown and the cheese starts to melt.
  • Gently flip the sandwich over using a spatula, adding a little more butter to the skillet if needed. Cook for another 4-5 minutes until the other side is golden brown and the cheese is gooey and melted.
  • Repeat the process with the second sandwich.

Step 5: Serve and Enjoy!

  • Once both sandwiches are grilled to perfection, remove them from the skillet and let them cool for a minute. This helps the cheese set a little, so you don’t burn your mouth when you take that first bite.
