Tater Tot Base:

  • 1 bag (about 32 ounces) frozen tater tots

Toppings:

  • 1 cup shredded cheddar cheese (or your favorite melting cheese)
  • 6 slices turkey bacon or beef bacon, cooked until crispy and chopped
  • 4 large eggs, scrambled
  • ½ cup sour cream
  • ¼ cup sliced green onions
  • ½ cup diced tomatoes (optional)
  • 1 avocado, diced (optional)
  • 2 tablespoons cilantro, chopped (optional)

  • Jalapeño slices for a little kick
  • Salsa or hot sauce for extra flavor
  • Shredded lettuce for a bit of crunch

Instructions

Step 1: Preheat the Oven and Cook the Tater Tots

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the tater tots in a single layer.
  • Bake for 20-25 minutes, or until they’re golden and crispy. For extra crispiness, flip them halfway through. Pro Tip: If you have an air fryer, cook the tater tots at 400°F for 15 minutes, shaking halfway through.

Step 2: Prepare the Toppings

  • Cook the Turkey Bacon: In a skillet over medium heat, cook the turkey bacon until crispy. Once it’s done, transfer it to a paper towel to drain excess oil, then chop it into bite-sized pieces. Tip: For a halal version, skip pork bacon and go for turkey or beef options.
  • Scramble the Eggs: Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until smooth. Heat a small amount of oil or butter in a nonstick pan over medium heat, pour in the eggs, and cook while stirring gently until they’re just set. You want them fluffy but still soft.

Step 3: Assemble the Tatchos

  • Remove the tater tots from the oven and sprinkle the shredded cheddar cheese evenly over them. Pop the tray back in the oven for about 3-5 minutes or until the cheese is melted and gooey.
  • Once the cheese is melted, pull the tater tots out of the oven and start adding your toppings. Start with the scrambled eggs, then sprinkle the crispy bacon, diced tomatoes, green onions, and avocado. Finish with dollops of sour cream or drizzle it over the top if you prefer.

Step 4: Serve

  • Serve the tatchos on the tray or transfer to a large platter. Add some jalapeños or hot sauce for those who like it spicy and shredded lettuce if you want extra crunch. Pro Tip: Serve with salsa on the side for dipping, or top with fresh cilantro for a zesty finish.
