Instructions

  1. Preheat the Oven
    Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent the bites from sticking.
  2. Prepare the Filling
    In a mixing bowl, combine the crumbled feta, ricotta, honey (if using), garlic powder, black pepper, and half of the beaten egg. Using a fork, gently mix until everything is well incorporated. You’re aiming for a slightly chunky texture that still holds together.
  3. Roll Out the Puff Pastry
    On a clean, lightly floured surface, roll out the thawed puff pastry sheets. If the sheets are too thick, roll them out slightly thinner to ensure a light, crispy bite. Using a sharp knife or a pizza cutter, cut the pastry into squares about 2 inches by 2 inches.
  4. Fill and Shape the Bites
    Place about a teaspoon of the feta mixture in the center of each puff pastry square. Be careful not to overfill, as too much filling can cause the pastry to burst open while baking. To shape, fold each corner of the square toward the center, pinching them together to seal. This will give you a little “pillow” shape that holds the cheese mixture.
  5. Brush with Egg Wash
    To get that beautiful golden finish, brush the tops of the bites with the remaining beaten egg. This step is optional but highly recommended for a professional look.
  6. Bake the Bites
    Place the filled and brushed bites on the prepared baking sheet, leaving a little space between each one. Bake in the preheated oven for 12-15 minutes, or until the pastry is golden brown and crispy.
  7. Serve and Garnish
    Once out of the oven, let the bites cool slightly before serving. Garnish with freshly chopped herbs, if desired. Serve warm for the best flavor.
